Resepi Chilled Blueberry [or Peach] Cheesecake

Yawnnnn~ Head's nodding with sleepiness but I just can't resist to put in a recipe or two in my long-forsaken blog :P Thanks to BeeComel@myresipi.com, but I've durhaka-ed from the original resepi due to low blueberry storage :P Hehe..


Chilled Blueberry [Or Peach] Cheesecake (beecomel@myresipi.com)

Bahan:
Filling:

250g x 2 blocks cream cheese (I used Philly's)
400g condensed milk @ susu pekat manis
2 3/4tbs gelatine (disolved in hot water. Kalau tak cair gak, cairkan atas api yang sangat kecil)
1tbs lemon zest (didn't put)
2tbs lemon juice (I used the peach's sugar syrup in the can)
cubes of sliced peaches from a can, for the filling (my version)
slices of peaches, for deco (my version)

Base:
1C crushed biscuits (I used 6 leftover chocolate muffins, crushed :p )
1/2C melted butter (I used just a tablespoon of melted butter, enough for the crushed muffins to stick together when pressed)

Cara:
  1. Campurkan biskut hancur dengan melted butter, kemudian tekan padat pada base loyang springform pan. Simpan sebentar dalam peti ais.
  2. Dalam mixing bowl, pukul cream cheese sampai smooth. Masukkan susu pekat manis, gelatin (yang dah larut), lemon zest, lemon jus/sugar syrup dan pukul lagi sampai sebati (ku guna the back of a spoon je, malas nak kotorkan my pemutar mixer :P)
  3. Masukkan cubes of sliced peaches kalau buat peach cheesecake. Kalau tak, terus tuangkan adunan cheese ke atas base tadi, simpan dalam peti sejuk untuk beberapa jam.
  4. Deco dengan blueberry or peaches.

Note: Tekstur cheesecake ni seakan agar-agar, rather firm-ish but not too firm. Kalau buat peach cheesecake, lebih sedap guna lebih banyak peach dalam filling sebab peach agak masam manis, kena dengan rasa cheese yang kemasaman. Kalau guna sket terasa lebih kemanisan susu pekat manis.

Note to self: Nak letak topping peaches etc. makes sure cheese tu belum set sepenuhnya. Dah tuang adunan cheese, simpan dalam peti ais for about a minute or two baru letak peaches. Kena benamkan sikit dalam cheese kalau tak nanti topping to slide off sebab cheese dah keras.
